Cockles are bivalve molluscs, found in estuaries round the British coastline, their shells are comprised of two hinged parts that protect a soft body. Cockles only live-in salt water, burying themselves beneath the sand of the sea bed. They feed on plankton by filter water through their shells.
The heart shaped shells contain a small, delicate morsel of flesh that can be eaten raw, steamed or boiled, they have a delicious salty flavour. Traditionally served alongside laver bread and bacon as part of a Welsh Breakfast, or as a seaside snack, but cockles are wonderful in other dishes too.
